zeros(size()) generates a double matrix, and when imwrite the maxtrix to file, matlab will convert double to [0,1], and convert to [0, 255], and finally the image will be black or white.

the color image has 3 channels, and the monochrome image has one channel. we can check the number of channels of the image to check whether the image is monochrome or not.
