For Sharepoint 2010 & SharePoint 2013, if you want to change the exisiting master page or you want to customize the Master Page, then you have to set in the following setting:

Master page (http://.../../_Layouts/ChangeSiteMasterPage.aspx).

But sometimes, you can't find it under Look and Feel.

If you want it, please activate below fetures, one is at site collection level , another is at site level.

Go to: Site Setting>Site Collection Administration>Site Collection Features> Activate "SharePoint Server Publishing Infrasture"

Go to: Site Setting>Site Action>Site Features>Activate "SharePoint Server Publishing"

Once you have done with above steps, now go back, you will find that option under "Look and Feel".

Note: If you want your master pag to be applied to all subsite, please select "Reset all subsites to inherit this site master page settings"
